  6. Prepare 1 of Dry chilli.
  7. Prepare 1 tbls of Kashmiri chilli powder.
  8. It's 1 tbls of Corriender powder.
  9. You need to taste of Salt.
  10. You need 1/2 tsp of Lime juice (to sprinkle).
  11. You need of Mix spices 1/2 tsp (fennel seeds,mustard,urad dhall, fenugreek).

This dish can be prepared in many different ways with regular spice powders. I love lady finger, but some people avoid due to its slimy nature. I was in the same category untill I heard this from my Big Aunt. She told me to add curd Add in curd and mix well.

  1. Add oil in pan. Fry onion, garlic, ginger, spice mix, curry leaves & dry chilli. Stir. Cook untill onion turn glassy.
  2. Add ladies finger. Stir well..
  3. Add salt,chillie powder, corriender powder. Stir well. Cook for 2 minutes. Sprinkle lime juice. Stir and mix well. Cook for 5 minutes..

Fry this on high heat till the curd evaporates and the lady finger gets nicely browned. Adding curd makes the sliminess out. Wash and dry the ladies finger on a towel. Drying them will remove the excess moisture and help in faster browning while cooking. Once the ladies finger is cooked, remove from heat and set aside.
