GLUTEN FREE SOFT AND CHEWY CHOCOLATE CHIP COOKIES
Ingredients for the cookies

1 cup Expandex Modified Tapoica Starch

(Expandex is available for sale on our Expandex page)

2/3 cup Sorgum Flour

3 Tablespoons Corn Starch

3/4 teaspoon xanthan gum

1/2 teaspoon baking soda

1/8 teaspoon salt

1/2 cup butter
1/2 cup (packed) light brown sugar
1/4 cup light corn syrup
1 large egg
1 1/2 teaspoon vanilla extract

1 3/4 cup semi-sweet chocolate chips

Procedure:

1.) Preheat oven to 375 degrees

2.)Measure and blend dry ingredients

3.) In a seperate bowl add butter, brown sugar and

light corn syrup

4.) Cream mixture lightly.  Mix in eggs and vanilla

5.) Gradually add dry ingredients to creamed mixture at low speed.

6.) add chocolate chips and blend by hand

7.) Using a large cookie scoop or tablespoon place batter unto an ungreased or parchment lined cookie sheet.

8.) Bake for 7-10 minutes or until done

9.) Cool on racks.  Cookies baked on an ungreased cookie sheet should be removed immediately to avoid sticking
