About Celiac Specialties
Our mission is to offer a place where a person with Celiac Disease can go and have a "normal" bakery experience. That is, to experience the sights, smells, and sounds of a place that would normally be off limits to them.
And, we're more than a bakery! We're a place of comfort and support to the thousands of people who suffer from this autoimmune disease.
Food is not only for survival, food helps us celebrate many emotional milestones in our lives. Celiac Specialties hopes to make this easier and more convenient for our customers.
About the Owner: Michelle Fuller
Michelle Fuller, an avid cook, often taught cooking classes. One day, a student asked if she might be interested in cooking for a friend who had a toddler with an intolerance to wheat and gluten. She agreed and soon began learning all about cooking gluten-free meals and baked goods. She used special mixes from gluten-free food companies and also began developing her own recipes.
Before long, Fuller also began taking orders from members of the Detroit area Tri-County Celiac Support Group. Because she was getting all the business and orders she could handle while working out of her home, she decided she must either "move on or go for it." So, she opened the Celiac Specialties Bakery & Coffee House on June 3, 2003.
Fuller uses her own gluten-free baking base. She blends rice, potato starch, and tapioca starch along with ingredients such as xanthan gum and guar gum to improve texture and elasticity. She also developed her own special baking techniques to handle the gluten-free mixtures which behave very differently from wheat flour doughs and batters.
Celiac Specialties Products have been showcased and sold at numerous Gluten Free Food Shows throughout the country.
We also cater to the autistic community with a variety of gluten and casein free breads, donuts, dry mixes and other items.
Celiac Specialties New Location
Celiac Specialties success nationally and locally has lead to the necessity of a new location. Celiac Specialties new location in Novi will feature our old favorites as well as many new additions. Additionally, Mr. Ritt's products will be sold.
